I Like Thursdays #37
I Like Thursdays #37 will be food-related today. I’m joining with LeeAnna at Not Afraid of Color and the rest of my friends who join in on these posts. You can find all of our links over at Not Afraid of Color. I hope you stop by and leave some encouraging comments.
I like fresh basil. I like its scent and taste. We grow basil in pots on our deck, along with thyme and rosemary.
I also like fresh mozzarella. I like it on pizza, in couscous bowls, and in pasta salads.
This pasta salad is one of my favorite summer foods. I like making it. All the ingredients – see the basil and fresh mozzarella in there? – are tossed together while the pasta is still hot. The cheese melts, the spinach and basil wilt just a bit, and the whole thing is tossed with olive oil, garlic and salt and pepper – I wish you could smell it – yumm! The original recipe is not my own, but my version is usually based on whatever ingredients I have on hand. It makes a large quantity – that bowl is about 14″ in diameter. We had it for dinner tonight, and it was delicious!
I like new suggestions for reading. I can’t recall who suggested this book, but I’m looking forward to reading it. Have you read it? Did you enjoy it?
I like my daily walks in the sunshine. I’ve been getting out each day so far this month. There rain in the forecast today, though. We’ll see if I sneak one in!
That’s my short I Like Thursdays #37 post. I didn’t have many this week; I guess I’ve been sewing too much (is there such a thing??) and not paying attention to likes!

Thanks for the pasta salad tip of tossing it while the pasta is still hot. Am going to try it before my crop of sweet basil dies (we are in winter here)

the salad sounds good – do you ever try whole grain pasta to make it healthier? I have tried the healthier pasta and can’t stand it and continue to use the white flour pasta which isn’t good for you but taste good 🙂 I have tried a salad like this with a little bit of pepperoni chopped into bite size bits too.

That looks like a good book. I’ll be curious to know if you enjoy it. I’m making a pasta salad this week…new recipe, of course. Also making some gazpacho. I’m happy to be getting back to eating some cold dishes outside.

Your pasta salad looks and sounds delicious, Wendy! I like fresh basil, too, but haven’t thought to grow some in a pot like that. I should try it. Do you make pesto with it? I’m not familiar with that book, but I’ll have to go take a look at it!

Wendy, I love seeing food and hearing about what’s in things. I love this kind of meal especially now in the heat. Your salad looks delicious and fresh herbs would be awesome. I’ve been using more apple cider vinegar and lemon in things…amazing what a difference a little spritz can make. Kudos to you for walking…it’s a great exercise.
